I've always predominantly made my beats using samples and then twisting/editing from there. At the moment I'm using Shortcircuit 1, which is a free VST sampler and has a lot of very good features for adding life to dry samples - loads of filters, distortions, delays, freq shifting. I also second the Nord Modular, especially for getting random/humanized hi hats and deep, deep kicks.

Impulse from Ableton Live, Sampler to select a specific section of a loop for something percussive (also Live instrument), Battery 2 or 3 or my Triton Extreme for some snare stuff. That's pretty much what I've been using along with percussion samples.
